Ice cream is one of the most enjoyable desserts in the summer. In fact, I cannot think of anyone who doesn’t love ice cream! There’s nothing more refreshing than a bowl of your favorite flavor after a meal, right?
But, with today’s modern life of living, we have to make wise and healthy eating choices. No more fat, no more processed sugar, no more preservatives. Plus, we all want to stay in shape, and keep our cholesterol, blood pressure and blood sugar levels balanced. But wait! You don’t have to give up ice cream! There’s a way for you to enjoy this delicious dessert without a guilty conscious.
Here we show you how to make a healthy ice cream, with powerful antioxidant and anti-inflammatory properties. The main ingredients of this frozen pleasure are coconut and turmeric.
Golden Turmeric And Coconut Milk Ice Cream
This enjoyable dessert is made of natural ingredients only. For the preparation, you’ll need the following ingredients:
– 200 ml of coconut cream (or half a cup of coconut yogurt or coconut milk)
– 400 ml of organic coconut milk
– 3 tablespoons of pecans (and a handful for the topping)
– 1 cup of cashew nuts (soaked)
– 80 ml of maple syrup
– 1 teaspoon of cinnamon
– 2 teaspoons of turmeric powder
– A quarter teaspoon of cardamom
– A half teaspoon of ground ginger
Immerse the cashews in water and leave them overnight.
The next day, line a standard cake pan with parchment paper, with the ends of it hanging on the sides. While you prepare the ice cream mixture, put it in the freezer.
Next, remove the cashews from the water and drain them. Add them in a food processor, along with the remaining ingredients. Pulse until completely crushed and combined.
Pour the mixture into the already cold cake pan. Return it back in the freezer.
Once the creamy mixture is frozen, decorate it with pecans on the top, serve and enjoy!
Note: An ice cream machine may come in handy here, helping you to make the mixture thicker and creamier.
